Pak Choi Cabbage also commonly known as Bok Choy is a fantastic Asian cabbage. Pak Choi is not your standard cabbage as it doesn't form heads and has green leaf blades with lighter bulbous bottoms instead. This Asian cabbage is often used in Asian cuisines but it is also a common vegetable used in soy sauce, stir fry's and soups. It contains a huge amount of beneficial nutrients such as vitamin C, vitamin E, and beta-carotene, shockingly it also contains rare minerals that are not often seen in vegetables for example selenium which decreases tumor growth rates and helps to detoxify some cancer-causing compounds in the body. Pak Choi seeds will germinate at a rapid rate and the vegetable is ready to be harvested in about 50-80 days after sowing. Then the Chinese Pak Choi cabbage can be blanched and frozen for 3 to 4 months.
